Role Description
The Pastry Sous Chef supports the Executive Chef in designing innovative pastry menus, overseeing the daily operations of the pastry section, and ensuring the highest quality desserts are served to guests. The position involves team leadership, operational efficiency, and guest interaction, creating an unforgettable culinary experience for every visitor.
Responsibilities
Menu Development:
Collaborate with the Executive Chef to create and update seasonal pastry menus.
Innovate and design visually stunning desserts that reflect the lodge's culinary excellence.
Operational Management:
Oversee pastry preparation, ensuring consistency in taste and presentation.
Manage stock control, inventory, and ordering for the pastry section.
Quality Assurance:
Ensure all pastry dishes meet the lodge's 5-star standards.
Maintain strict hygiene and food safety protocols.
Team Leadership:
Train, mentor, and supervise junior pastry chefs and kitchen staff.
Foster a positive and collaborative work environment.
Cost Management:
Minimize waste and optimize ingredient usage to manage food costs.
Maintain accurate production and expense records.
Guest Interaction:
Engage with guests during special events or tastings.
Personalize desserts for guest preferences or dietary requirements.
Requirements
Education & Experience:
Diploma or degree in Culinary Arts, with a specialization in Pastry Arts.
3–5 years of experience in a luxury hospitality setting, with at least 1–2 years in a leadership role.
Skills:
Expertise in advanced pastry techniques, including chocolate work, sugar art, and artisanal bread-making.
Creativity in designing unique and appealing desserts.
Strong organizational and multitasking abilities.
