Bertha Retreat includes overnight accommodation for 34 guests, conferencing facilities and meeting rooms, a micro-farming and food production project, and a community resource centre.Bertha Retreat is managed by Bertha Spaces - a registered non-profit company (NPC) and program of Bertha Foundation established to create safe and inclusive spaces in which activists can come together to build more just cities, countries and planet.
Our network of spaces enables people and groups to work and meet, build community and networks, find opportunities for connection and learning, and amplify work and campaigns.Bertha Retreat is looking to hire a Head Chef on a fixed-term contract - six months in duration - to manage the kitchen and take responsibility for all catering for guests and visitors to the site.This individual should be passionate about food and working with people and groups from around the world and of varying backgrounds.We want all guests - regardless of where they come from - to enjoy nutritious, delicious and healthy food during their stay with us.
The Head Chef will be responsible for designing menus, managing and training kitchen staff, and coordinating kitchen procurement in a cost effective and socially and environmentally responsible manner.
We expect leadership in this role with an emphasis on growing talent within the team and motivating cooks, scullery workers, and other kitchen staff to develop their skills.Key Responsibilities:Full management and leadership of the kitchen teamDesigning and delivering creative and diverse daily menus (three meals a day)Placing all kitchen goods and stock orders and managing stock controlParticipating in the running of the Bertha Retreat vegetable gardenTraining staff in food preparation, hygiene, etc.Offering and overseeing internship opportunitiesUnderstanding and planning around different dietary requirementsUnderstanding food costs and seasonal ingredients for menu planningUnderstanding of food preservation, bottling and fermentation processesGood knowledge of bakingKnowledge of local, sustainable, and ethical food providers and producersSetting up the kitchen and sourcing of cooking utensils and equipmentManaging recycling and bio-wasteEnsuring compliance with all Health and Safety regulations within the kitchen areaExperience & Requirements:Matric and culinary school diploma or similar qualification5 - 10 years experience as a chef or cookAt least 2 - 3 years experience in managing a large teamSpoken English and another language preferableExperience in all types of cuisineUnderstanding of and preferably experience in catering for large groupsHands-on experience with various kitchen equipment (e.g.
grillers, pasta makers, etc.
