Hospitality and Outdoor – New Vacancy – Head ChefLuxury Lodge - HluhluweRequirements:Minimum of 3-4 years previous Head Chef experience in a 4/5-star hospitality environment (Essential)The Head Chef must oversee daily operations, as well as delivering an extraordinary guest experience within the lodge.You will plan and supervise the activities of the team to ensure, not only the smooth and profitable running of the business, but also ensuring that we leave the world in a better place.Work with Executive Chef to ensure menu and food are aligned to lodge quality standardsWork with Exec Chef to ensure food scores and budgets are being monitored and metWork directly with the Guest Relations Managers and Head Guide, to ensure service standards are maintained at all times,Food Hygiene and professional cooking qualifications (Essential)Knowledgeable of all dietary and religious requirementsGood knowledge of creating, implementing, and maintaining written control documents and training manualsGood knowledge and understanding of stock procedures and controlGood knowledge of planning, budgeting, and departmental administrationDescription:Systemize and streamline the kitchen – ordering stock, food preparation and presentation, timely delivery, wastage reduction, hygiene, budget control from receiving to execution.Menu compilation and implementationMaintain and go above the established standards of food hygiene, cleaning and food handling to maintain impeccable quality within the kitchen, which meet current standards of legislation and compliance.Effective Kitchen Administration to minimize shortages and wastage and effective stock control, assuming full responsibility of any shortages, wastage, and variances.Prepare budgets and aim to achieve budgeted gross profitTo take complete responsibility for the profitability of the department.To manage and monitor all costs and implement measures to control them.Package on offer:Negotiable depending on experience & live in.Starting Date:ASAP.
