Executive Sous Chef - 4* Hotel Airport

A 4* international brand hotel with over 200 rooms seeks to employ an experienced Executive Sous Chef with the followingESSENTIAL REQUIREMENTS!MatricProfessional Cookery Diploma with HACCP knowledgeMust have 5 years experience within a 4 or 5 * hotel with banqueting for at least 1000 pax, the proeprty has over 10 banquet venues and can serve up to 1500 pax.Knowledge of costing, controls are a must, must be able to oversee multi-outletsMust currently be holding the position of Exec Sous in a 4 or 5 * Hotel environmentStrong on banquetingGood staff management skills be able to mange costs and controlsOwn car and license will be a distinct advantageResponsibilities include: Write SOPs for every product and service that leaves the kitchen and then be diligent on the execution of all SOP's.
