5* Lodge in Madikwe is looking for an Executive Chef.Responsible for: Monitor and manage all aspects of the Main kitchen as well as the kitchen at the tented camp Ensure that all department staff are well trained, in order to provide the highest quality of work and ensure all staff are fully aware of their own job description and responsibilities.Responsible for the training, managing, controlling and discipline of all staff within the department.Menu planning, considering guest dietary requirements and allergies.Staff mealsNew, creative dishes and ideasEnsure that all Food preparation, storeroom, fridge, freezer, scullery, refuse storage and general kitchen areas are kept clean and maintained at all times, in accordance with the Hygiene report.Knowledge of Legislations applicable to F&B operations. Health and safety and hygiene audits.Ensure that all kitchen equipment is kept clean and in good working order.Weekly shift rosters.All stock takes, orders and control of food.Minimizing food wastage.Kitchen budget, expenditure versus product, price, and service.Ensure fluent, timely and effective service of all meals.Liaising with the Restaurant service department, on dishes served, to ensure all service staff is aware of the content and preparation of all food dishes served to answer any questions asked by the guests on the meals served.Making contact with guests daily to ensure their happiness.Creating and maintaining a healthy and fun work environment and ensuring that the kitchen runs as smoothly as possible.Requirements: Completed diploma in Professional CookeryAt least 3 Years Experience as a Head Chef / Senior Sous ChefThe ability to communicate and collaborate effectively with team members and clientsGood knowledge of Plus Point system.Great knowledge of food cost and menu planning R22K + Live in (All Meals Included) & Medical Aid Start Date#J-18808-Ljbffr
