Assistant Head Chef

Candidate requirements:Relevant qualifications from a recognized culinary institution.At least 35 years of experience in a similar role, preferably in luxury safari lodges, boutique hotels, or fine dining establishments.Strong understanding of South African and international cuisine, with the ability to incorporate local ingredients and flavors.Experience in creating seasonal and bespoke menus, including catering to dietary restrictions and preferences.Expertise in plating and presentation, maintaining high aesthetic and quality standards.Ability to support the Head Chef in managing the kitchen team and training junior staff.Proficiency in kitchen operations, stock control, and inventory management.Strong knowledge of food safety regulations, with experience implementing and maintaining hygiene standards (HACCP or similar certifications are a plus).Experience with food costing, portion control, and minimizing waste.Capability to work in remote locations with limited resources while maintaining high standards.Enthusiastic about providing exceptional dining experiences for guests in a safari setting.Innovative in menu design, incorporating local and seasonal produce.Collaborative approach to working with other departments in the lodge.Ability to work long hours, especially during peak seasons.Proficiency in English (additional local or international languages are an advantage).Willingness to live and work in a remote setting with varying schedules.This is a live-in role. Salary R22kpm DOE
