This award-winning modern and trendy Boutique Wine Estate & Cellar Restaurant offers a unique mix of South African contemporary cuisine, fine dining gourmet, small tapas for the cellar tasting menu, and a culinary journey for the evening's 5 or 8 course menu. Open 5 days a week from 09H00 till 22H00, the daytime trade is more relaxed with a focus on wine tasting and menu sampling while evenings are a more formal affair with intimate wine pairing dinners in a sophisticated and luxurious ambiance.
ProStaffSelect is in search of a highly polished WINE CELLAR, ESTATE RESTAURANT & HOSPITALITY OPERATIONS MANAGER to handle daily operations, oversee staff, and control both front of house and cellar service in terms of quality of food, drinks, and tapas served for wine tasting sessions.
REQUIREMENTS:
Hotel Management or equivalent F&B Service / Hospitality or Business qualification.
WSET level 3 or Cape Wine Academy qualification essential.
At least 5 - 6 years industry experience within TOP 10 EAT OUT awarded Restaurants and a la carte / fine dining establishments.
Individuals that are highly focused on all aspects of SERVICE and the ENTIRE DINING EXPERIENCE.
Strong leadership skills, demonstrating confidence in planning, directing, and managing staff and systems.
Effective administrator, showing attention to detail and an eye for accuracy.
Experience in dealing with staff discipline, training, implementation of SOP's and controls.
Highly proficient in Point of Sale Systems.
A sense of URGENCY in responding to and reacting to matters as they arise.
Absolute ATTENTION TO DETAIL.
PRIMARY OUTPUTS:
Work with daily bookings, invoices, emails, and correspondence.
Staff scheduling and meetings to discuss menu highlights, set up requirements, and service standards.
Highly proficient in Point of Sale and Back of House software as well as Excel, Word, and Office.
Proven success and abilities in planning, organizing, and staff management.
Passion for FOOD and knowledge of WINES, Artisan COFFEE, and 5* service standards.
Experience in procurement / sourcing of hiring of staff and equipment.
Good people skills, resourceful thinker & innovative worker.
Proficient in selling signature wines and excellent knowledge of fine dining cuisines.
A hands-on operator that leads by example and is passionate about this industry.
