JOB SUMMARY: The Specialty Sushi Chef/Cook is responsible for all types of cooking functions required for the preparation of specialty (Sushi) menu items.
The Specialty Sushi Chef/Cook prepares of all proteins, vegetables, sauces and side items required for the sushi bar.


ESSENTIAL JOB FUNCTIONS: Prepare specialty food items in accordance with kitchen needs. Prepares portions and garnishes hot and cold foods. Perform various job duties that will include operation of grill, fryer, broiler, oven and French top in accordance with kitchen needs. Perform preliminary preparation work in a timely manner. Ensures ingredient supply levels are accurate.
Move items from shelves to carts and transport to assigned stations for restocking purposes. Maintains the required par of food items in their assigned station from support areas. Understand proper safety and health codes and regulations and maintain them regularly. Ensure all areas assigned are clean and free of debris To assist with any other job-related duties that may be assigned. Reviews prep list daily and completes all prep required according to sushi bar specifications provided by the Head Sushi Chef Ensures sushi bar stations, prep area, and refrigerators are kept clean and organized at all times Oversees first in/first out process to ensure items are utilized before their expiration date Receives, inspects, and puts away all sushi bar items when they are received Prepares sushi rice according to recipe guidelines. Provides Family Style Service at all times.
QUALIFICATIONS: 2+ years Sushi Cook experience working in a high volume and upscale establishment. Ability to satisfactorily communicate in English (speak, read, write) with guests, co-workers and management Ability to perform assigned duties with attention to detail, speed, accuracy, follow-through, courtesy, cooperativeness and work with a minimum amount of supervision. Ability to accurately follow established recipe and technique guidelines Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to work well under pressure and handle multiple tasks at once. Ability to be well organized, maintain concentration, and think clearly while providing service to many guests at any given time. Punctuality and regular and reliable attendance. Interpersonal skills and the ability to work well with other team members and the public. Must be available to work Dinner Shifts. Work requires ability to work from a standing position for extended periods of time. Work requires a neat appearance with good personal hygiene.
PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS: Loud, fast paced environment, multiple tasks to be handled under time constraint.
Must be able to handle a heavy business volume in a timely manner.
