Safari JOBS is searching for a Sushi Chef for a very busy, well-established, premier 5* restaurant situated in a breath-taking area of Stellenbosch.
The Sushi Chef is responsible for assisting the Head Chef in managing food stock and handling various ingredients with attention to detail to maintain quality standards.
This restaurant offers an extensive a la carte menu with additional Japanese Omakase type dining options.
Experience in Japanese cuisine is essential for success in this position.
Please note that this is not a Chinese restaurant.
Due to the live-out nature of this position, our client can only consider applications from Stellenbosch, Paarl, Franschhoek, Somerset-West, and the Northern Suburbs.

Minimum Requirements:
Clear criminal record and excellent employment track record
Matric, Culinary Diploma preferred
Preferably +/- 4 years of previous experience in a senior chef role
Work experience as a Sushi Chef or at an Asian restaurant
Good knowledge of various sushi types and sushi-rolling techniques
Own transport with a valid driver's license
Basic computer skills (Word, Excel, Outlook)

Responsibilities:
Creating & preparing a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
Prepare appetizers, soups, and salads that are close to the philosophy of Japanese cuisine
Manage and lead the kitchen staff in the Head Chef's absence
Coordinate with the waitron staff to ensure proper cooking, considering special requests and food allergies
Provide guidance & training to junior kitchen staff members, including but not limited to line cooking, food preparation, and plating
Supervise all food preparation and presentation to ensure quality and restaurant standards
Oversee and organize kitchen stock and ingredients, including proper dating and quality assurance
Improve waste reduction and manage budgetary concerns
Work with the head chef to maintain kitchen organization, staff ability, and training opportunities
Monitor and maintain hygiene and health and safety principles
Compensation:
CTC monthly remuneration: NEG. DOE & qualifications (Please advise your salary expectation upon application)
Pension fund contributions: Included within the CTC but is voluntary / not compulsory to take
Uniform provided
Working Days / Hours:
5 days on (shifts), 2 days off
