A prestigious 5-star property in the beautiful town of Franschhoek is seeking an experienced and dedicated Sous Chef to assist the Head Chef in delivering an exceptional culinary experience. The successful candidate will support the Head Chef in managing kitchen operations, overseeing food preparation, and ensuring that all dishes meet the property's luxury standards. This role involves supervising kitchen staff, maintaining high standards of quality and safety, and ensuring efficiency in the kitchen.
Key Responsibilities:
- Assist the Head Chef in overseeing daily kitchen operations and maintaining smooth service.
- Supervise and support kitchen staff in preparing, cooking, and plating high-quality dishes.
- Collaborate in menu development and contribute creative ideas to enhance the guest dining experience.
- Monitor food quality, presentation, and portion control to ensure consistency.
- Help manage kitchen schedules, staffing, and task assignments for efficient workflow.
- Ensure compliance with health, safety, and sanitation standards across all kitchen areas.
- Support inventory and cost control initiatives by assisting in stock management, ordering supplies, and minimising waste.
- Act as the Head Chef's second-in-command and step in during the Head Chef's absence.
Requirements:
- Citizenship: South African
- Education: Culinary Arts qualification or equivalent experience in a professional kitchen.
- Experience: Minimum 3 years of experience in a high-end kitchen, with previous experience as a Senior Chef de Partie or Junior Sous Chef.
Skills:
- Culinary Proficiency: Strong cooking techniques, with attention to detail in flavour, presentation, and timing.
- Kitchen Operations: Knowledgeable in managing kitchen workflows, coordinating tasks, and ensuring operational efficiency.
- Team Supervision: Ability to lead, motivate, and support kitchen staff in a collaborative and positive environment.
- Menu Development: Experience contributing ideas to menu planning, with a creative approach to local ingredients and seasonal flavours.
- Quality Control: Focus on food quality and consistency, ensuring high standards in every dish served.
- Time Management: Excellent organisational skills for managing multiple tasks and working under pressure.
- Health & Safety: Knowledge of food safety protocols and sanitation practices to uphold a safe kitchen environment.
- Administrative Support: Ability to assist with ordering, inventory management, and cost-control measures.
- Adaptability & Problem-Solving: Resourceful in handling kitchen challenges and able to step up in the absence of the Head Chef.

- Valid driver's licence and own vehicle.
- Preference for candidates residing close to Franschhoek.
