Job DescriptionOur client is seeking a strong Executive Chef to run kitchen operations for a 26 sleeper property that also has a dedicated Kosher kitchen in addition to the standard kitchen, as well as an equally strong Sous Chef to work alongside them.
The Executive Chef will be responsible for ensuring the guests enjoy the culinary experience at the lodge by quality control checks on taste and presentation, by staff training and all menu and recipe planning.
To manage the Kitchen department both front & back of house.
Duties will include but not be limited to:
Creating of all menus including daily breakfast, lunch and dinner but also buffets, Kosher menus, vegan, dietary requirement menus, villa menus and for special events such as Christmas, new year, weddings etc.
Providing menus, photos and recipes for chefs for all dishes.
Game drive snack recipes, menus and photos to ensure they are correct.
Cookie/rusk/muffin recipes, menus and photos to ensure they are correct and rotated.
Smoothie recipes, menus and photos to ensure they are correct and rotated.
Chef training of dishes and plating to the lodge standard Preparing for chef interviews for the interviewee.
Attending department interviews
While the Sous Chef is responsible for ensuring the guests enjoy the culinary experience at the lodge by following the lodge standard.
Duties will include but not be limited to:
Making sure the Chefs follow the standard menus/recipes and platings for meals, smoothies, muffins, cookies, snacks, platters, boxes etc.
Creating menus/recipes as needed.
Overseeing junior Chefs plating and making of dishes during service and assisting them as needed.
Cooking and plating of meals.
Overseeing hygiene control within the kitchens.
Cleaning of cooking/service areas.
Assisting with Stock takes as required.
Orders as required.
Making sure the department has everything it needs at all times and advising the relevant person when stock is low.
