Job Advert SummarySupreme Processing has an opportunity available for a Quality Assurance Controller in the New Product Development Department to ensure that all products produced in the factory adhere to stringent specifications and required standards for food safety and quality. The successful incumbent will be responsible, but not limited to the below.Minimum Requirements3-5 years Meat Processing ExperienceGrade 12 (Matric)Food Technology Diploma or Degree / Culinary Chef in similar field advantageousComputer LiterateSelf-motivated and ability to work independently.Competent on job specific in-house job skills.Detail and accuracy orientated.Willing to work overtime.Duties and ResponsibilitiesCalibrate the Henny Penny daily before cook-ups.Ensure the scale is working properly.Ensure thermometers are within calibration date.Report to the manager if hygiene standards throughout the plant and/or pilot plant are not adhered to and report workers not adhering to the required standards as per procedures.Perform relevant start-up checklists such as the Oil TPM%.Conduct and record Line Pick-ups at each stage of the process to ensure product complies with given specifications.Capture trial plan data and evaluate the results, requesting product modifications if required.Measure and record batter viscosity.Record the settings used on the fryer.Ensure ingredient codes are recorded for each trial.Ensure product visuals and specification pick up % / weight at each step is according to specification.Ensure tests are carried out on final trial samples.Determine samples' meat versus coating %.Ensure samples cooking validations are done.Collect recon of trial info at the end of the trial.Receive and record final product and/or shelf-life samples for sensory evaluation daily.Prepare samples for cook up and record initial and final weights.Ensure product exiting the fryer/air fryer/oven is within the required core temperature >72°C.Complete daily sensory evaluation sessions and record daily KPIs comments from the taste panel.
