Pastry Sous Chef

Our client is seeking a Pastry Sous to join them at their luxurious 5-star game lodge, where exceptional cuisine meets unparalleled wilderness. As the Pastry Sous Chef, you will support the Executive Pastry Chef in creating and executing a diverse and innovative pastry menu. You'll oversee daily pastry operations, ensure high standards of quality and presentation, and manage a team of pastry chefs.Key Responsibilities:Assist in designing and executing the pastry menu, including desserts, pastries, and bread.Supervise and mentor the pastry team, ensuring adherence to quality and safety standards.Oversee daily pastry operations, including production, plating, and presentation.Collaborate with the culinary team to integrate pastry items into the overall dining experience.Maintain inventory and manage ordering of ingredients and supplies.Ensure compliance with hygiene and sanitation regulations.Innovate and introduce new pastry techniques and trends to enhance the menu.Requirements:Proven experience as a Pastry Chef or similar role, with a minimum of 3 years in a high-end or 5-star establishment.Culinary degree or equivalent certification in pastry arts preferred.Strong knowledge of pastry techniques, baking, and dessert presentation.Exceptional organizational and leadership skills.Ability to work effectively in a fast-paced, high-pressure environment.Creative flair with attention to detail and a passion for culinary excellence.Flexibility to work various shifts, including weekends and holidays.
