This permanent position will suit a mature, competent, innovative and energetic person with an even temperament and a caring personality towards elderly persons. The ideal candidate will have a proven track record as a pastry chef and direct the preparation, of all pastry related dishes, desserts, and/or other foods when needed
Key Responsibilities:
Monitor sanitation practices to ensure that employees follow standards and regulations.
Check the quantity and quality of received products.
Supervise and coordinate activities of cooks and workers engaged in food preparation.
Inspect supplies, equipment, and work areas to ensure conformance to established standards.
Instruct cooks and other workers in the preparation, production, garnishing, and presentation of food.
Ensure that all stocks are kept under optimum conditions.
Ensure that all mise-en-place is always freshly prepared and on time.
Ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
Ensure that all dishes leaving the kitchen are correctly garnished, in the correct portion and size, presented on the prescribed serving dish in the prescribed manner, keeping the standard as set by the chef.
Ensure that their section is being always kept clean and tidy. Ensure that the junior chefs uphold the required food quality & standard of dishes as prescribed by the chef.
Ensure that any anticipated shortages are communicated promptly to the Sous chef or Executive chef.
Tracking inventory to ensure you always have adequate supplies.
Adhere to set Health, Safety and quality protocols; and
Ability to assist in other kitchen stations, when required.
Key Requirements:
Matric
Minimum 3 years working experience as a pastry chef.
Supervisory experience advantageous.
Attention to detail and ability to work under pressure.
Capacity to stand for long hours and lift heavy equipment.
Thorough knowledge of food safety guidelines.
Excellent organizational, time management, and multitasking skills.
Effective communication.
Commitment to the production of high-quality outputs and excellent customer service.
Able to work long hours, day and night, including weekends and public holidays (shifts) as assigned.
Clear criminal record and sober habits.
