With a reputation for excellence and a commitment to delivering high-quality services, we rely on the expertise of our Line Cooker to perform work on the production line and execute cooking duties.Experience:At least two (2) years as a line cooker in the food manufacturing industry.Formal Qualifications:MatricResponsibilities:Ensure that line sterilization is done on Monday, Wednesday & Friday. The Pasto/Cooker and the Coolers need to be >104 degrees Celsius for 10 minutes. (CCP). Every 40 hours.Ensure correct manufacturing processes & parameters. Ensure correct amount of rework is added to batch.Ensure that each batch of product is pasteurized as instructed on recipe before transfer to Coolers.Ensure correct quantity and quality to the required specifications. Ensure correct brix is checked at holding time.Follow correct cooking procedures as well as the exact cooling procedures. Fill in correct times and names on cooking and recipe sheets.Documentation to be completed in full and correctly. Fill in correct times and names on cooking and recipe sheets.Follow all Company policies and safety procedures. Ensure good working relationships with colleagues and supervisors.Follow shift change over policies by communicating any problems to the new shift.Fill in the starting times & finishing times on the cooking time sheet.Ensure that there are no foreign objects in product. Ensure that the packer takes a bucket of sludge from the filter to be given to Q.C.Inform Supervisor and QC department if any variations exist between RM and batch weight.Ensure correct batch, batch code and size are correctly loaded.Ensure high hygiene levels by reporting to cleaner if soap dispensers are empty, ensuring good hygiene practices and keeping the work area clean.Report to Supervisor any variations from quality standards and procedures.Provide total efficient manufacturing in all departments.All injuries of any kind should be reported to the supervisor and First Aid Officer immediately.Remove all empty containers and empty pallets to designated areas. Remove all empty bags and dirt.Inform maintenance department of any technical and mechanical problems.Ensure that there are enough raw materials for the day's batches.Ensure proper micro samples are taken by packer per line and for the specific day.Adhere to GMP & HACCP policies, ensure that the Food Safety Policy is followed at all times, report to Supervisor or HACCP Team Leader if any problems occur.All utensils, equipment and machinery are to be clean and sanitized.Ensure that the metal detector is working/functioning properly when packing batches at all times.Fill in and sign the metal detector sheet daily/on each shift.Ensure that packing filter/bazooka is sterilized/steamed for >104 degrees Celsius for 5 minutes before packing each batch of product at sterilization all times.Fill in times and temperature on packing time sheet to ensure packing is done.Follow correct packing procedures as well as the exact cooling procedures and packing pump speeds.Documentation to be completed in full and correctly. Fill in correct times and names on packing, tank sterilization and tank labels.Ensure tanks are packed with the correct weights and that they are labelled correctly and clearly.Ensure that there are enough raw/packing materials for the day's batches.To comply with the applicable compliance guidelines.And any other tasks necessary for the conduct of the business as the employer may from time to time direct.Commit to act according to the key management principles and the safety-first culture as defined in the Safety-first policy.Inherent Requirements For The Position:Excellent communication skills.Attention to detail.Work well under pressure.Effective problem-solving skills.Awareness of safety regulations and practices.Computer literacy (Microsoft Office package).Physically capable of moving loaded drums and other containers.Shortlisted candidates will be expected to undergo psychometric testing and background screening.
