Responsibilities:Provide strong support to the kitchen staffSupervise food preparation and cooking. Help run the pass if need beCreate and implement daily maintenance and cleaning schedules for kitchen equipmentOrganise preventative maintenance or replacements as neededTrain and schedule staff - identify problem areas and address them through trainingSystemise and streamline the kitchen administration ordering stock, food preparation and presentation, timely delivery, wastage reduction, hygiene, budget controlMaintain and go above the established standards of food hygiene, cleaning and food handling to maintain impeccable quality within the kitchenImplement, monitor, and maintain constant communication between the Kitchen, Management and Front of House staffCandidate Requirements:Minimum of 4 Years previous senior chef experience in a 4/5* Safari Lodge Environment in a remote setting (Essential)Food Hygiene and professional cooking qualifications (Essential)Strong Management and Admin skills- this is a BOH job in the kitchen with emphasis on admin, not cheffing, however if needed you will be able to help with serviceKnowledgeable of all dietary and religious requirementsGood knowledge of creating, implementing, and maintaining written control documents and training manualsStrong Admin and Financial Acumen- Excellent knowledge of planning, budgeting, and departmental administration- ensure the kitchen is well planned and catered for with no unplanned shortages within budgetExcellent HR Skills- Control all staff rosters, discipline and proceduresGeneral maintenance experience is beneficialMature, responsible well-presented individual who can problem solve and is of sober habitsGreat team player who can work well under pressureHands on, running shifts- setting an example from the front lineExcellent people skills in terms of managing staff and interacting with guestsComputer Literate (Word, Excel, Micros)
