Game Lodge in the Wolmaransstad are seeking a dynamic and experienced Head Chef to ensure all food is of the highest quality and produced in the mostefficient, cost-effective and safe way.Menus:Liaise with Restaurant General Manager and Food & Beverage Manager to construct menus with new or existing culinary creations.Collaborate with Restaurant General Manager and Management to set menu prices.Stay current with developing trends in the restaurant industry to identify and introduce new culinary techniques.Kitchen:Coordinate, control, direct and oversee the food preparation process.Approve and polish dishes before they are served.Maintain the kitchen and surrounding areas in conditions that meet company standards and policies as well as health and safety regulations.Implement and monitor food quality controls to ensure that all food served is as per standard and meets customer expectationsEnsure proper equipment and maintenance operations.Oversee special catering events and where necessary, offer culinary instruction and demonstrate techniques.Staff:Assist with staffing decisions.Foster a climate of cooperation and respect between co-workers.Ensuring the efficiency of the kitchen and staff.Assisting and directing kitchen staff in meal preparation, creation, plating and delivery.Training of kitchen staff (menu implementation, industry practices and methodology).Management and Administration:Liaise with the Food & Beverage manager to monitor and manage inventory and forecast supply needs.Weigh in on guest complaints.Liaise with Restaurant General Manager to organise the duty roster for kitchen staff.Attend departmental communication meetings.Carry out day-to-day administration.Deal with any problems as they arise.Requirements:Formal Chef QualificationAt least 3+ years Chef Experience requiredInternational exposure will be an advantageSpoken and written EnglishComputer literateAbility to cost menus.Passion for food and the food experienceAbility to lead a team of people effectivelyStrong management skills, day-to-day, and long termThe ability to motivate staff to consistently deliverAbility to think and act creatively within a teamGood knowledge of hospitality operations
