My client in Stellenbosch is looking for a hands-on Head Chef.
We are looking for a creative and proficient Head Chef in all aspects of food preparation. Your role is multifaceted encompassing duties described below. These attributions are essential and rely on your leadership to maintain complete control of the kitchen. We are looking for a Chef that has worked in luxury properties before, has a creative flair a passion for local produce, staff training and development as well as guest relations.
Duties and Responsibilities (but not limited to):
Plan and direct food preparation and culinary activities;
Modify menus or create new seasonal menus that meets quality standards;
Estimate food requirements and food/labour costs;
Stock control;
Supervise kitchen staff's activities;
Arrange for equipment purchases and repairs;
Recruit and manage kitchen staff;
Rectify arising problems or complaints;
Give prepared plates the "final touch";
Perform administrative duties;
Comply with nutrition and sanitation regulations and safety standards;
Keep time and payroll records;
Maintain a positive and professional approach with coworkers and customers;
Requirements and Skills:
Proven working experience as a Head Chef / Executive Chef;
Wine farm experience is essential;
Excellent record of kitchen management;
Ability to spot and resolve problems efficiently;
Capable of delegating multiple tasks;
Keep up with trends and best practices;
Working knowledge of various computer software programs;
Must have formal culinary qualifications;
At least 2 years management experience in a 4/ 5* operation.
