Kendrick Recruitment is seeking a Head Chef to join a luxury lodge based in Northern KZN. In this role, you will be responsible for managing 2 kitchens, including the scullery, cold and hot sections, and baking.
Key Responsibilities:
Set and maintain high kitchen hygiene standards
Train chefs and implement kitchen standards
Ensure presentation is as discussed and according to Styling Guide
Create creative Bush Banqueting according to Food Styling Guide
Ensure proactive maintenance
Have good communications with team and stakeholders
Maintain good stock controls and stock rotation
Be responsible for all food orders, storerooms, and fridges and deep freezes in absence of the executive chef
Check all food going out to guests at any time in absence of the executive chef
Check buffets/dinner/breakfasts
Check quality and quantity of snacks to game drives and Adventures
Interact well with guests: invite feedback
Promote good discipline and fair treatment: be a role model
Promote good teamwork
Have fun and be flexible
Always be approachable
Be aware of and make your follow chefs aware of special dietary needs for guests
Meet special dietary guests before their first meal to establish their requirements
Requirements:
Minimum of 2 years of chef experience
Passion for kitchen management, including all kitchen administration, general hygiene, and people management
Passion for training staff, creating fabulous food, and new ideas
Good interpersonal skills
Sense of urgency
Passionate about guest delight
Attention to detail
Diligence and self-motivation to meet deadlines and keep on top of your job
Willingness/ability to share information and teach and inspire others
Driver's license (code 8)
