Strong, Dynamic Head Chef needed for a beautiful 5* Camp in the Kruger Park area. A proven track record in creating and plating exciting new dishes and a strong background in Kitchen administration is needed to excel in this role.
Requirements
Minimum of 4 Years previous senior chef experience in a 5* Lodge Environment (Essential)
Food Hygiene and professional cooking qualifications (Essential)
Comprehensive knowledge of current leading culinary trends- wine pairing knowledge advantageous.
Knowledgeable of all dietary and religious requirements
Good knowledge of creating, implementing, and maintaining written control documents and training manuals
Good knowledge and understanding of stock procedures and control
Good knowledge of planning, budgeting, and departmental administration
Mature, responsible well-presented individual who can problem solve and are of sober habits
Great team player who can work well under pressure
Organized and detail-oriented
Hands on, running shifts.
Excellent Guest relations skills- Enjoy interacting with guests.
Computer Literate (Word, Excel, Micros)
Driver's License
Only SA Citizens or Foreign Nationals with VALID work permits
Description
Having a strong ability and willingness to train, mentor, manage and continually improve the kitchen team through encouragement and positivity
Systemize and streamline the kitchen administration – ordering stock, food preparation and presentation, timely delivery, wastage reduction, hygiene, budget control from receiving to execution
Menu compilation and implementation
Strong presence in the front line in terms of preparation and presentation for superior quality
Maintain and go above the established standards of food hygiene, cleaning and food handling to maintain impeccable quality within the kitchen, which meet current standards of legislation and compliance.
Managing, leading, and training of the kitchen staff in line with the property food directive, ensuring food preparation to the highest standard.
Proven record of managing staff emphatically and establishes a positive and co-operative atmosphere between employees
To take complete responsibility for the profitability of the department.
Implement, monitor, and maintain constant communication between the Kitchen, Management and Front of House staff.
Ensure the stock control, stock take, and requisition procedures are strictly followed according to par levels and company standards, ensuring accuracy.
Perform other tasks and assist in other departments whenever reasonable and deemed necessary by Management.
Be an outstanding team leader to the other staff by setting an example and improving standards for guests and staff constantly.
