Candidate Requirements:Grade 12 and Culinary qualification/certificationAt least 2 to 3 years of relevant experience as a Head Chef in a luxury lodge environment Strong creativity and passion for culinary arts, with a focus on diverse cuisines and modern cooking techniquesMust be experienced in menu development for various customer needsBe able to attend supplier meetings, conduct price comparisons and quality-checkingMust have exceptional leadership skills, be a mentor and be able to train the junior kitchen staffExcellent attention to detail and excellent hygiene principlesMust be able to cater for large functions up to 150 guests for weddings, birthdays, conferences, etc.Must be experienced in working service for an a la carte restaurant which serves breakfast & lunchMust be well-equipped and experienced to get orders moving fast and consistentlyMust be fully computer literate and have working knowledge of Excel (costings & inventory management)Must be hardworking, willing to work flexible and sometimes long work hours when there are functions (Essential)be willing to do FOH and BOH duties such as check-in/out of guests, Guest Relations and managing the lodge in the Lodge Manager's absence
