A luxury lodge, close to Addo is looking for a Head Chef. We are looking for an Head chef who will be inspired by the beautiful surroundings to create a culinary experience at the lodge. The Head Chef plays a vital role in creating a thrilling and unforgettable dining experience.
Menu Creation: Design seasonal menus that showcase local and international cuisine, emphasizing fresh, high-quality ingredients and innovative culinary techniques. In line with the costings and budgets.
Budget Management: Manage kitchen expenses, inventory, and budgets effectively, optimizing costs without compromising on quality.
Kitchen Management: Oversee all aspects of the kitchen operation, including food preparation, cooking, plating, and presentation. Ensure compliance with hygiene and safety standards.
Staff Leadership: Lead, motivate, and mentor kitchen staff, fostering a positive and collaborative work environment. Provide training and guidance to maintain a skilled and cohesive team.
Quality Control: Maintain high standards of food quality, taste, and presentation. Conduct regular tasting sessions and implement improvements as necessary.
Supplier Management: Build and maintain relationships with suppliers, ensuring the procurement of fresh, seasonal, and premium-quality ingredients.
Guest Interaction: Interact with guests to understand their preferences, dietary requirements, and feedback, ensuring a personalised dining experience.
Requirements:
At least 2 to 3 years relevant experience
Culinary degree or equivalent qualifications from a recognised institution.
Strong creativity and passion for culinary arts, with a focus on diverse cuisines and modern cooking techniques.
Exceptional leadership and communication skills, with the ability to inspire and motivate a team.
Knowledge of local and international food trends, sustainable practices, and dietary preferences.
Ability to work well under pressure and maintain composure in a fast-paced environment.
Flexibility to work evenings, weekends, and holidays as required.
