5* Hotel in Camps Bay is currently recruiting for an experienced Food & Beverage Manager, responsible for leading and organising the F&B Team, ensuring highest guest service level in accordance with brand standards whilst looking after the financial success of the department.This position offers a high-paced, ever-changing environment with opportunities to apply your social skills on a daily basis as part of a highly effective team; whilst operating within clearly defined standards and expectations, where your generalist food and beverage expertise can be recognisedResponsible for:Manage the F&B Team in accordance with brand principles by:Ensuring constant floor presence during peak operational times; interacting with both staff and guests, taking personal responsibility for every guest and staff situation, seeing it through to its solution.Ensuring that all staff appraisals are completed timeouslyNurturing a positive and honest relationship with employees with the goal of achieving performance of excellence and high levels of staff retention.Actively involved in the training and development of each team memberApplying performance management and corrective action tools and support staffRecommending updates to hotel policies and procedures, in order to maintain high standards and provide the best possible serviceTake an active role in the OPCO committee and when required lead as chairmanManage the day-to-day operations of the F&B department by:Supporting the outlet management in the day-to-day operationDeveloping Food & Beverage concepts, menus and pricing together with the Executive ChefPlanning and executing food and Beverage special events and make contributions to promotional ideas to drive revenue and PREnsuring the Food & Beverage department is properly resourced with necessary operating equipment, consumables, staff and beverageEnsuring that all stock is appropriately stored and controlled; and take responsibility for stock variancesEnsuring that all revenue is properly generated and accounted for by controlling all billing procedures, ensure that all revenue is recorded; that cash-ups are completed according to procedure; and that all pricing is in line with budgeted %GP.Managing operating costsManage and control Food and Beverage stock by:Ensure that the beverage cost remains in line with budgetImplement and manage wastageEnsure that the cellar store, freezer, chemical room and gas room are managed and controlledEnsuring sufficient stock, minimal wastage and best pricingEnsure that all purchase orders are checked and that the Food and Beverage Cost controller and Store man manages the stock store correctlyEnsure the smooth running of monthly Food and Beverage stock take.Assume the duties of the Hotel Weekend MOD as and when required:Attendance of the Morning MeetingEnsure that inspections of the entire hotel is made and any challenges are addressedPresence and support in the F&B Outlets and the Front Office lobbyEnsuring that rooms have been prepared in accordance with hotel standardsEnsure that the rooming procedures and food and beverage services are tested against Hotel standardsEnsure that thorough reports of the week-end inspections, challenges and successes is submitted to the Executive teamRequirements:Diploma in Hotel or Food and beverage OperationsMust have at least 10 years' experience in a 5* Hotel or Fine Dining EstablishmentFood and Beverage management experienceWSET Wine Level 2 or similar advantageousFluency in English, Xhosa and/or Afrikaans advantageousComputer literate with working knowledge of Microsoft Outlook, Word and ExcelExposure to a Stock Management Systems (FnBShop & Micros advantageous)Neat with high regard for personal hygiene and presentationSolid English verbal communication skillsUnderstanding and application of basic math calculationsExperience in F&B administration, food ordering and stock and cost controlProven ability to train and manage peopleProven ability to be creative and innovative new revenue generating ideas.Able to work flexible hours, weekends and holidays
