The Executive Chef at a 5 Star Game Lodge is responsible for overseeing all aspects of the culinary operations, ensuring the highest standards of food quality, presentation, and service. This role requires creativity, attention to detail, and the ability to work in a remote, luxury environment. The Executive Chef will lead and inspire the kitchen team, manage inventory and budgets, and maintain health and safety standards.
Key Responsibilities: Menu Development and Execution:Design and implement diverse, seasonal menus that highlight local and sustainable ingredients.Ensure all dishes are prepared to the highest standards of taste and presentation.Continuously update and innovate the menu to meet guest preferences and trends.Oversee all kitchen operations, including food preparation, cooking, and presentation.Manage kitchen staff, including hiring, training, scheduling, and performance reviews.Ensure the kitchen operates efficiently and safely, maintaining high standards of cleanliness and hygiene.Guest Experience:Engage with guests to understand their culinary preferences and accommodate special dietary requirements.Create memorable dining experiences that reflect the lodge's luxury standards.Develop and manage the kitchen budget, controlling costs without compromising quality.Conduct regular inventory checks and manage procurement to ensure the availability of fresh and high-quality ingredients.Monitor food and labor costs, making adjustments as necessary to meet financial goals.Compliance and Safety:Ensure compliance with all health and safety regulations, including food handling and sanitation standards.Maintain up-to-date knowledge of culinary trends and best practices.Implement and enforce policies and procedures to ensure the safety of guests and staff.Qualifications: Education: Culinary degree or equivalent certification from a recognized culinary institution.Experience: Minimum of 5 years experience in a high-end, luxury culinary environment, with at least 3 years in a leadership role.Skills:Exceptional culinary skills with a strong portfolio of innovative dishes.Strong leadership and team management abilities.Excellent communication and interpersonal skills.Ability to work under pressure and manage multiple tasks simultaneously.Knowledge of diverse cuisines and current culinary trends.Proficiency in kitchen management software and MS Office.Personal Attributes: Passion for food and hospitality.Creative and innovative mindset.Strong organizational skills and attention to detail.Ability to adapt to a remote, natural environment.Commitment to sustainability and responsible sourcing.Working Conditions: This position is based in a remote game lodge, which may require living on-site for extended periods.Flexibility to work irregular hours, including weekends and holidays, as required by lodge operations.Competitive salary and performance-based bonuses.Accommodation and meals provided on-site.Health and wellness benefits.Opportunities for professional development and career advancement.
