We are looking for a skilled Chef de Partie (CDP) to prepare delicious meals according to the menu but at the same time to be creative, coming up with their own dishes and to ideally develop the menu offering. You will cook dishes that will delight our customers with their taste and timely delivery.
An excellent Chef de Partie must be able to follow instructions in cooking and delivering well-prepared meals. They must be deft in moving around the kitchen and be able to multi-task. Experience in using various ingredients and cooking techniques is also important.
The goal is to help preserve and enhance our reputation so we can expand our clientele.
Responsibilities
· Ensure workstations are set up with all needed ingredients and cooking equipment.
· Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
· Cook food using various utensils or equipment.
· Ensure all meals prepared for a la cart are over seen by you.
· Ensure great presentation by garnishing dishes before they are served.
· Skilled at running a pass and coordinating.
· Keep a sanitized and orderly environment in the kitchen by applying all the necessary health and hygiene practices and reporting on these.
· Ensure all food and other items are stored properly.
· Check quality of ingredients
· Monitor stock and place orders when there are shortages.
· Stock taking on a 10-day basis and reporting on variances.
· Controlling wastage and ensuring correct portion control
Requirements
· Proven experience as Chef de Partie
· Experience in using cutting tools, cookware, and bakeware.
· Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.)
· Ability to follow all sanitation procedures.
· Ability to work in a team.
· Understanding and experience in stock taking
· Very good communication skills
· Excellent physical condition and stamina
High school diploma or equivalent; Diploma from a culinary school will be an advantage
