Job Summary: The Sommelier at a 5-star game lodge is responsible for managing the wine service and wine program, curating a world-class wine list, and providing expert recommendations to enhance the guest dining experience. The role requires a deep knowledge of wine, excellent customer service skills, and a passion for delivering a luxurious and memorable experience to guests. The sommelier works closely with the culinary team to ensure perfect pairings and contributes to the lodge's overall high standards of hospitality. Key Responsibilities: Wine Selection and Pairing: Curate and manage an exceptional wine list that complements the lodges gourmet menu and caters to the preferences of an international clientele. Work closely with the Head Chef to recommend wine pairings that enhance the dining experience. Source and maintain a diverse selection of wines, focusing on high-quality South African wines and international labels. Guest Engagement and Service: Provide personalized wine recommendations and engage with guests to elevate their dining experience. Lead wine tastings and educational sessions for guests, showcasing the lodges wine offerings. Deliver professional and elegant wine service, including decanting, pouring, and explaining wine selections. Wine Inventory Management: Maintain accurate inventory records of the lodges wine cellar, ensuring proper stock levels and storage conditions. Monitor wine sales and manage the procurement of new stock, keeping in line with the lodges budget and standards. Ensure proper handling, storage, and serving temperatures for all wines. Training and Collaboration: Train and mentor the food and beverage team on wine service, etiquette, and product knowledge. Collaborate with the kitchen and bar teams to maintain the highest standards of service and presentation. Stay updated on wine trends, industry developments, and new products, ensuring the lodge remains at the forefront of luxury wine offerings. Compliance and Health & Safety: Ensure all wine service complies with health and safety regulations, including correct glassware usage and hygiene standards. Adhere to all local liquor laws and policies governing the service of alcohol. Guest Relations and Events: Assist with organizing and hosting special wine events, dinners, or tastings that align with the lodges luxury experience. Handle guest inquiries, complaints, or special requests regarding wine service professionally and efficiently. Build strong relationships with returning guests, ensuring personalized service and attention to detail. Education: Certification from a recognized sommelier program (e.g., Court of Master Sommeliers, WSET). Formal training in wine, spirits, and hospitality is an advantage. Experience: Minimum of 2-3 years of experience as a sommelier in a luxury environment, preferably within a 5-star lodge, hotel, or fine dining restaurant. Strong knowledge of South African wines and international wine regions. Skills and Competencies: Excellent knowledge of wine service, pairing, and presentation. Strong communication and interpersonal skills, with the ability to engage with a diverse range of guests. Ability to work in a remote, high-pressure environment while maintaining professionalism and poise. Strong organizational skills and attention to detail.
