Candidate requirements: Must have at least 5 years of experience in a hotel kitchen as a sous chef. A valid RSA ID is essential. A valid driver's license is essential. Must have experience in health and safety and be able to maintain and implement it in the workplace. Must have experience with Q-pro or similar audit systems. Must have experience in the disciplining of staff and ensure a good working environment. Must be able to assist with menu planning and costings of each dish. Must know about POS, capturing invoices, and ordering. Must have experience catering for functions up to 500 pax. Must have experience in fine dining, ala carte as well as buffets. Responsibilities include; Assist the Executive Chef in co-coordinating and supervising the running of the entire kitchen department to maintain the highest standard and achieve maximum guest satisfaction. To assist in increasing profitability, achieving the budgeted GP and stay within the budget for general kitchen expenses. To take full charge of the kitchen when the Executive chef is not on duty. To ensure that a courteous and efficient service is always provided to the guest in line with the companys mission statement and policies. Take charge of kitchen stock takes On-the-job training. This is a live in position, no pets or families can be accommodated. Salary is R18kpm max, depending on experience and calibre. Meals are provided when on duty. Medical aid and provident fund contributions included.
