Food & Beverage Operations Manager – Luxury Hotel / Estate, Cape Town
A hotel / wine estate in Cape Town is seeking a highly skilled and experienced Food & Beverage Operations Manager to oversee and manage all F&B and Meetings & Events (M&E) operations within the establishment. Candidates must have a minimum of 5 years' experience in a similar role within a 4/5* hotel or estate.
Key Responsibilities:

Oversee day-to-day F&B and Meetings & Events (M&E) operations, including restaurants, bars, and catering services for M&E.
Ensure compliance with health, safety, and sanitation regulations.
Implement and enforce operational procedures and standards to enhance efficiency and service quality.
Recruit, train, and manage food and beverage staff, including servers, chefs, and bartenders.
Conduct performance evaluations and provide coaching and feedback.
Foster a positive and collaborative work environment to ensure high staff morale and retention.
Develop and manage the food and beverage budget, including forecasting, cost control, and financial reporting.
Monitor inventory levels and order supplies to maintain optimal stock while minimizing waste.
Analyze financial performance and implement strategies to achieve revenue and profitability targets.
Ensure exceptional guest service by addressing and resolving customer concerns and complaints.
Monitor guest feedback and implement improvements based on reviews and suggestions.
Develop and implement promotional strategies to attract and retain guests.
Collaborate with chefs and bartenders to develop and update menus and beverage offerings.
Ensure menu items meet quality standards and are consistently prepared and presented.
Stay informed about industry trends and incorporate new ideas to enhance the dining experience.
Ensure all food and beverage operations adhere to local, state, and federal regulations.
Implement and enforce safety protocols to prevent accidents and ensure a safe working environment.
Conduct regular inspections and audits to maintain high standards of cleanliness and safety.
Strong negotiating and closing skills required, along with a demonstrated ability to develop negotiation strategies for complex activities.

Requirements:

Postgraduate / Degree or three years Diploma in Hotel Management or equivalent is preferred.
Previous 5* experience either as a Senior Assistant F&B / F&B Manager is required.
Must have own car and a valid driver's license.
Candidates must be available for face-to-face interviews in Cape Town and should reside in the Stellenbosch, Paarl, Franschhoek, or Somerset West region.
